Boiled Artichoke and Dipping Sauce

To boil an artichoke:

1. cut off the end of the leaves with a scissors.
2. pull off the small leaves hanging off the bottom.
3. rinse in cold water.
4. boil water in large pot with some basil, minced garlic and s and p to taste.
5. boil for 30-45 minutes until soft and leaves are easy to pull off.

To make dipping sauce:

1. 1 tbsp. of mayo
2. 1/4 tsp. honey
3.1/2 tbsp. dijon mustard
4. 1 tsp balsamic vinegar 
5. garlic, basil and salt and pepper to taste.
To eat, pull off leaves and dip in dipping sauce. Suck the meat off the end of the leaves. When you get to the inner most 'heart' of the artichoke, you can eat, or use for spinach dip- a recipe soon to come!
